Do not use canned jalapenos here. The brightness of fresh jalapenos is the perfect food foil for savory bacon. And everything went smoothly with lots of cheese.

Consider this recipe’s overall spices instead, reduce the amount of jalapeño peppers used. Two to three jalapenos still work. Or if you’re ready to play with fire a little harder. Add bacon, jalapenos, and cheese by substituting Serrano peppers. They give a firm heat bump. (Double Heat) is for those who like more heat with equally bright and fresh taste.

  • 1 box of pasta (optional)
  • 4 jalapeno peppers, seeded, thinly sliced
  • 1 pound bacon, sliced
  • 2 glasses of milk
  • 2 cups grated cheddar cheese
  • 1 cup Velveta cheese cubes
  • 2 tablespoons butter
  • 1 teaspoon cayenne pepper
  • 2 to 3 drops of Tabasco sauce
  • Salt and pepper to taste
  • Preheat oven to 400 degrees F.

  • Boil water in a saucepan or pot. Then boil the pasta to Al dente level. (Follow the directions on the pasta packaging)

  • Line baking tray with aluminum foil. Then place the bacon strips on the baking pan. Add slices of jalapeno peppers to the bacon strips. Place the baking pan in the oven and bake for 20 to 25 minutes, until the bacon is cooked through.

  • Remove the bacon and jalapeños from the oven. Then place it on a paper towel that covers the plate.

  • In a separate saucepan over medium heat. Add butter and milk, heat, beat frequently until butter is melted, add cheddar cheese and velvet. Continue heating the mixture, stirring frequently until cheese is melted and sauce is smooth.

  • Bacon and chopped jalapenos (If you want smaller pieces of jalapenos)

  • Mix macaroni and cheese sauce together. then add Jalapenos bacon, chili powder, hot sauce, salt and pepper, stir well and place in a baking dish.

  • Place the mac and cheese in the oven and bake for 15 minutes (or until the top is lightly golden brown). Remove from oven, let cool for 5 minutes and serve.

Adjust the amount of jalapeño used according to your tolerance for heat. If you like something very spicy, Serrano peppers would also suit this recipe. and double the heat as jalapenos.
