  • 12 chopped carrots, worth about 2 pounds
  • 1 liter vegetable broth
  • 1 can coconut milk, 13.5 oz. maybe
  • 1 white onion, diced
  • Juice of 1 lemon, about 2 tablespoons
  • 2 tablespoons Thai red curry powder
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1/2 teaspoon salt
  • Ground red chili for garnish (optional)
  • In a large skillet, high side over medium heat. Heat olive oil and sauté onion until soft and clear (about 5 minutes).

  • Add garlic and red curry powder and stir until fragrant, stirring frequently for 1 minute.

  • Add the vegetable and carrot broth and increase the heat to high. Bring to a boil, then reduce heat to medium and cook until carrots are tender (about 20 minutes).

  • Blend the soup with a hand blender until smooth. (Or transfer the soup to a blender to do so.)

  • Add coconut milk, lemon juice and salt. Continue to simmer for 5 minutes, stirring occasionally.

  • Ladle the soup into a bowl, garnish with crushed red pepper and serve immediately.
