Chipotle Bourbon BBQ Sauce

  • 1 1/4 cups ketchup
  • 1/4 cup bourbon
  • 1 paprika from chili powder adobo
  • 1 yellow onion, diced
  • 2 cloves minced garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon dark brown sugar
  • 1 teaspoon chipotle adobo in adobo
  • 1/2 teaspoon celery salt
  • 1/2 teaspoon black pepper
  • in medium saucepan Melt butter and add yellow onion over medium heat. Cook onions until soft and clear (about 5 minutes).

  • Add minced garlic and stir for 1 more minute.

  • With tomato sauce, bourbon, paprika, adobo sauce, apple cider vinegar Balsamic vinegar, honey and brown sugar Lower heat and stir.

  • Let the sauce simmer for 30 to 40 minutes on low heat.

  • Use a blender to blend the sauce until smooth.

  • Add salt, celery and black pepper. Stirred.

  • Turn off the heat and let the sauce cool to room temperature.

  • Use immediately or transfer to an airtight container and chill the sauce in the refrigerator for up to a week. (The sauce will increase in spiciness during this time.)
