Chipotle Bourbon BBQ Sauce

- 1 1/4 cups ketchup
- 1/4 cup bourbon
- 1 paprika from chili powder adobo
- 1 yellow onion, diced
- 2 cloves minced garlic
- 2 tablespoons unsalted butter
- 2 tablespoons apple cider vinegar
- 2 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon dark brown sugar
- 1 teaspoon chipotle adobo in adobo
- 1/2 teaspoon celery salt
- 1/2 teaspoon black pepper
in medium saucepan Melt butter and add yellow onion over medium heat. Cook onions until soft and clear (about 5 minutes).
Add minced garlic and stir for 1 more minute.
With tomato sauce, bourbon, paprika, adobo sauce, apple cider vinegar Balsamic vinegar, honey and brown sugar Lower heat and stir.
Let the sauce simmer for 30 to 40 minutes on low heat.
Use a blender to blend the sauce until smooth.
Add salt, celery and black pepper. Stirred.
Turn off the heat and let the sauce cool to room temperature.
Use immediately or transfer to an airtight container and chill the sauce in the refrigerator for up to a week. (The sauce will increase in spiciness during this time.)
