If you’re a spicy person (And who doesn’t?) the carrot chipotle soup is delicious. There’s the sweetness of carrots combined with the flesh of paprika in a very different adobo sauce. We added some cayenne pepper to add a little earthy flavor. (We know…and love three things on earth.) It’s a simple recipe to make, but the results are truly memorable. It’s a good thing to pull off to impress family and friends.

If you want this carrot potato soup to be more spiced, you can add a little paprika. But with added smoke and possibly adobo sauce, the balance of flavors can be overwhelming. Instead, we recommend adding crushed red pepper or cayenne pepper. Both bring out the heat with neutral flavors. So the taste of the soup stays as expected apart from the spiciness.

  • 7 medium carrots, peeled and diced (about 1 pound)
  • 2 potatoes, peeled and diced
  • 2 cloves minced garlic
  • 1 large yellow onion, diced
  • 1 chopped paprika (from paprika in adobo sauce)
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon adobo sauce from chipotle in adobo sauce
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Bell peppers as a garnish
  • Heat olive oil in a soup pot. (Or high skillet) over medium heat. Saute garlic and onions until onions are soft and clear (about 10 minutes).

  • Add carrots, potatoes, and hot peppers. Continue cooking ingredients, stirring frequently for 5 minutes.

  • Add chicken broth and adobo sauce. Simmer the ingredients on low heat. Then reduce the heat and cook the soup for 30 minutes or until the carrots and potatoes are tender.

  • Use a hand blender to blend the soup in the pot until smooth.

  • Increase the heat to medium again and bring the soup to a boil again. Add heavy cream and cayenne pepper, stir well. Add salt and pepper to taste. Sprinkle with paprika for color. then serve
