And we don’t think that’s an exaggeration at all. Also, as the name suggests – these are easy to implement.

The sweetness of the tortillas combined with the fresh jalapeno goes well with the salty-sweet flavor found in the barbecue. It’s an easy recipe. So don’t let another store pass without them! This recipe works with almost any type of roast. Although we don’t like pork or beef crumbs.

Serves 12 muffins

  • 2 to 3 tablespoons green or red jalapeno peppers, finely chopped
  • 1 cup corn kernels
  • 1 cup milk
  • 1 egg
  • 1/4 cup vegetable oil
  • 2 cups flour
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • Preheat oven to 400 degrees F.

  • Place eggs, milk and vegetable oil in a bowl. then beat them together

  • In a separate large bowl, combine flour, cornstarch, baking powder, sugar, and salt. mix

  • Slowly pour the egg mixture from the first bowl. to the second bowl. Then stir well until the mixture is soaked.

  • Add jalapeno peppers and corn and mix well. Stir until the peppers and corn are evenly distributed.

  • Spoon the mixture into lightly greased muffin cups and bake for 20 minutes.

  • Remove from oven and let muffins cool for about 5 minutes.

  • Remove the muffins from the mold and serve.

Adjust the amount of jalapeño used to increase or decrease the spiciness.
