Easy Jalapeño Corn Muffins
Perfect summer barbecues, great “grab and go” fare for picnics.

Serves 12 muffins
Calories 160 kcal
- 2 to 3 tablespoons green or red jalapeno peppers, finely chopped
- 1 cup corn kernels
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 2 cups flour
- 2 tablespoons sugar
- 2 tablespoons cornstarch
- 1 tablespoon baking powder
- 1 teaspoon salt
Preheat oven to 400 degrees F.
Place eggs, milk and vegetable oil in a bowl. then beat them together
In a separate large bowl, combine flour, cornstarch, baking powder, sugar, and salt. mix
Slowly pour the egg mixture from the first bowl. to the second bowl. Then stir well until the mixture is soaked.
Add jalapeno peppers and corn and mix well. Stir until the peppers and corn are evenly distributed.
Spoon the mixture into lightly greased muffin cups and bake for 20 minutes.
Remove from oven and let muffins cool for about 5 minutes.
Remove the muffins from the mold and serve.
Adjust the amount of jalapeño used to increase or decrease the spiciness.
