Be careful when handling habanero peppers: they are very strong and can burn the peppers. Wear gloves, especially when removing the white pulp inside the seeds. Habanero Cream Sauce

  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 Habanero chili, add a second for a spicier sauce, stem, halve and remove seeds
  • 1 teaspoon minced garlic
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Melt butter over medium heat in a large saucepan.

  • Add the habanero quarter and garlic to the butter and sauté for about 3 minutes until the butter is fragrant.

  • Pour in the flour and stir for about 30 seconds.

  • Add heavy cream and sugar. Continue stirring while it boils and thickens the sauce.

  • Lower the heat and slowly add the chicken broth, stirring until the sauce thickens.

  • Remove the sauce from the heat and let it cool to room temperature. Place the chopped habanero and pour the sauce into a covered plate or bowl.
