Habanero garlic sauce

- 6 Habanero peppers
- 2 carrots, chopped
- 2 cloves minced garlic
- 1 yellow onion, chopped
- juice of 1 1/2 lemons
- 2 cups of water
- 3 tablespoons white vinegar
- 2 tablespoons sugar (to sweeten) for flavor)
- 1 teaspoon salt
In saucepan over medium heat. Saute garlic until fragrant (1 or 2 minutes).
Add carrots, yellow onion and water, increase heat to high and bring to a boil.
Once it comes to a boil, immediately reduce the heat to low and simmer the mixture for 8 to 10 minutes (until the carrots are tender).
Remove the pan from the heat and add the Habanero pepper, lemon juice, sugar (optional) and salt. Stir well, then use a hand mixer. In a blender (or blender), beat ingredients into sauce, add sugar (optional) and salt to taste.
Let the sauce cool to room temperature. Use immediately or store in an airtight container (refrigerator) for up to two weeks. Remember that the sauce will heat up over time.
