  • 6 Habanero peppers
  • 2 carrots, chopped
  • 2 cloves minced garlic
  • 1 yellow onion, chopped
  • juice of 1 1/2 lemons
  • 2 cups of water
  • 3 tablespoons white vinegar
  • 2 tablespoons sugar (to sweeten) for flavor)
  • 1 teaspoon salt
  • In saucepan over medium heat. Saute garlic until fragrant (1 or 2 minutes).

  • Add carrots, yellow onion and water, increase heat to high and bring to a boil.

  • Once it comes to a boil, immediately reduce the heat to low and simmer the mixture for 8 to 10 minutes (until the carrots are tender).

  • Remove the pan from the heat and add the Habanero pepper, lemon juice, sugar (optional) and salt. Stir well, then use a hand mixer. In a blender (or blender), beat ingredients into sauce, add sugar (optional) and salt to taste.

  • Let the sauce cool to room temperature. Use immediately or store in an airtight container (refrigerator) for up to two weeks. Remember that the sauce will heat up over time.
