  • Soy sauce 1/3 cup
  • 3 tablespoons sugar
  • 1 tablespoon white miso
  • 1 tablespoon ginger juice or 1/2 to 1 teaspoon ground ginger
  • 1 teaspoon minced garlic
  • 1 tablespoon crushed red pepper, or to your liking, coarsely or finely pounded
  • Mirin for flavoring can be used in place of cooking wine.
  • Place all ingredients in a mixing bowl and stir.

  • Pour the sauce into a saucepan over medium heat and bring to a simmer. Once it has boiled, turn down the heat and let the sauce thicken. As it thickens, adjust the red pepper, miso, and mirin (or cooking sake) until the desired flavor balance is achieved.
