- 1 pound bacon
- 3 cups chicken broth
- 3 cups mixed Mexican cheese, cole and jack mix
- 3 jalapeno peppers, diced
- 3 stalks celery, diced
- 3 cloves of minced garlic
- 1 yellow onion, chopped
- 4 tablespoons butter
- 1/4 cup all-purpose flour
- 1 can of beer, 1 1/2 glasses, draft beer is the best.
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 tablespoon chili powder
- Salt and pepper to taste
- You can also croutons.
In a saucepan over medium heat Fry the bacon until crispy. Remove bacon from pan and place on paper towels to remove fat from bacon. Keep the fat in the pan.
Still using medium heat Cook the yellow onion, jalapeno, celery, and minced garlic in the bacon fat until the onions are translucent (5 to 7 minutes).
Add the butter to the pan and continue stirring until the butter is completely melted.
Transfer ingredients from pan to soup pot. Then add flour and stir for about 1 minute.
Add chicken broth and stir to combine. Then reduce heat to medium low. and let it boil for 10 minutes while stirring frequently
Add the beer to the pot and continue to simmer for 10 minutes.
With heavy cream, Dijon mustard and Worcestershire sauce Stir well.
Grate the bacon and add the bacon and Mexican cheese mixture to the pot. Continue stirring until the cheese is completely dissolved in the soup.
Add chili powder, plus salt and pepper. (to taste) Stir well.
Remove from oven and serve with bread or bread (optional).
If the taste of the beer is too strong, cut down on the flavor by adding a teaspoon of brown sugar. This will make it tastier.
