Who can resist Mac and Cheese? We couldn’t, especially when it turned into something tastier. For example, this spicy jalapeno and cheese recipe features pepper jack cheese and lots of chili. Just reading it made my mouth water.

Jalapeño Mac and Cheese is a delicious accompaniment. (We especially like all kinds of grilled meats.) But you may find yourself craving this lunch. This formula gives a lot of volume and stays pretty well under refraction. So try making a batch on the weekend for lunch or two meals during the week.

Want to turn it up a notch? Consider swapping out the serrano peppers for extra heat. Serranos can be more than twice as hot as jalapenos. So you may want to reduce the amount you use. Do you need to be gentler? Get rid of a slice or two of the jalapeno, or try regular jack cheese instead of pepper jack.

  • 1 pound of pasta
  • 1.5 pounds pepper grated cheese (usually 4 packs if purchased pre-sliced)
  • 2 cups of milk
  • 5 jalapeno peppers, chopped (remove seeds to reduce heat)
  • 1 white onion, chopped
  • 1 tablespoon minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons flour
  • Preheat oven to 350 degrees F.

  • Cook pasta in boiling water with a pinch of salt until pasta is cooked. Turn off the stove and let the water drain.

  • in a medium saucepan Heat olive oil and sauté jalapeños, garlic, and onions for 2 to 3 minutes. Remove heat and set aside.

  • In a saucepan, heat the butter until melted, then add the flour. mix

  • Add milk slowly (a few spoons at a time) and beat well.

  • Continue to beat the mixture and heat. When it comes together and thickens slightly, add 2/3 of the cheese and stir well.

  • Stir-fried Macaroni with paprika

  • Spray non-stick oil on a 9″ x 13″ baking pan and pour the mixture into the pan.

  • Sprinkle remaining cheese mixture over top (optional: sprinkle with jalapenos as well) and bake for 15 minutes, waiting for cheese to turn golden brown.

Increase the heat by replacing the 2 jalapeños with serrano peppers. Reduce the heat by replacing the pepper with a softer cheese, such as white cheddar.
