This jalapeño popper mashed potato recipe brings to the table everything you love about jalapeño poppers: fresh jalapeños, cream cheese, and bacon are all here. It will be my favorite party.
Jalapeno peppers are the sole source of heat here (very little heat comes out of the chili powder mix, actually), so if there’s a concern about the overall spiciness of the jalapeno mashed potatoes, go for it. You will need to reduce the amount of chili you use. Similarly, if you want something spicier, you can add jalapeno peppers. Also, throw in a cayenne pepper or two when you use cayenne pepper.

Jalapeño Popper Mashed Potatoes

Serves 6 meals

- 5 red potatoes, chopped
- 5 onions, chopped (white part only)
- 1 jalapeno pepper, seeded and finely chopped
- 2 cloves of garlic
- 4 ounces cream cheese 1/2 8-ounce pack
- 1/2 cup sour cream
- 1/4 cup butter
- 1/4 cup shredded bacon
- 1 tablespoon olive oil
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Place the potatoes in a large pot and cover with water.
Heat the water until it boils. Then reduce the temperature to medium low.
Boil potatoes for 10 to 15 minutes or until potatoes are tender.
Drain the potatoes and place them back in the large pot.
Mash the potatoes until smooth. (or how smooth you want)
while the potatoes are bubbling Heat olive oil over medium heat. Then sauté the jalapeño, scallions, and garlic for 2 to 3 minutes. Transfer the mixture to a mixing bowl.
Add cream cheese, sour cream, butter, and shredded bacon to the mixture. then stir well
Finish the potato
Add the popper mixture to the mashed potatoes and stir well.
Add salt, pepper, and cayenne pepper, stirring well (add to taste).
Want less spicy? Using only half of the jalapeno peppers? Want more of it? Add jalapeno peppers or add 1/4 teaspoon cayenne pepper to the mixture when adding cayenne pepper. Want to take things to the next level? Coat cheddar cheese on mashed potatoes and bake at 350 degrees F for 20 to 30 minutes! great
