  • 6 red potatoes, chopped
  • 2 jalapeno peppers, removed and finely chopped
  • 2 hard-boiled eggs, chopped
  • 2 celery stalks, chopped
  • 1/2 onion, chopped
  • 1/4 cup mayonnaise
  • 3 tablespoons brown mustard
  • 1 tablespoon Tabasco sauce
  • 1/2 teaspoon dill
  • Salt and pepper to taste
  • In a large pot, cover the potatoes with water and bring to a boil. Then reduce the heat to low temperature. Cover and simmer for about 10 minutes (or until potatoes are tender).

  • Drain potatoes and let cool completely.

  • In a small bowl, combine mustard, mayonnaise, Tabasco hot sauce, and cumin.

  • In a large bowl, combine potatoes, jalapenos, eggs, onion, and celery. Then pour mayonnaise/mustard on top. Then toss/toss the potatoes.

  • For best taste, refrigerate at least 2 hours before serving.
