Jalapeño peppers are 2,500 to 8,000 on the Scoville scale, while habanero peppers are 100,000 to 325,000 Scoville heat units. Substituting serrano peppers for jalapeños in the recipe below, serranos are usually twice as hot as jalapeños. But could not find anywhere near a fiery habanero.

  • Cut off the stem of the jalapenos and cut them in half lengthwise. For the seasoning syrup, keep the seeds and membranes intact. If not, remove seeds and membranes.

  • In a saucepan, heat water until almost boiling. Then add the sugar, stirring until the mixture becomes clear.

  • Add half of the jalapeno peppers and bring to a boil.

  • Reduce heat and simmer for 10 minutes. The sugar will start to thicken and you can see the color of the peppers change.

  • Remove syrup from heat. Let cool for 30 to 45 minutes or until cool to room temperature.

  • Halve the jalapenos. (and seed if included)

  • Pour the syrup into an airtight container and let it cool for an hour in the refrigerator before using.

Simple refraction of the syrup extends the shelf life by about a month. But for the best flavor, use simple syrup within two weeks of making. Jalapenos can change flavor when stored for a long time.
