Substituting serrano peppers for jalapeños in the recipe below, serranos are usually twice as hot as jalapeños. But could not find anywhere near a fiery habanero.

  • Cut off the stem of the jalapenos and cut them in half lengthwise. For the seasoning syrup, keep the seeds and membranes intact. If not, remove seeds and membranes.

  • In a saucepan, heat water until almost boiling. Then add the sugar, stirring until the mixture becomes clear.

  • Add half of the jalapeno peppers and bring to a boil.

  • Reduce heat and simmer for 10 minutes. The sugar will start to thicken and you can see the color of the peppers change.

  • Remove syrup from heat. Let cool for 30 to 45 minutes or until cool to room temperature.

  • Halve the jalapenos. (and seed if included)

  • Pour the syrup into an airtight container and let it cool for an hour in the refrigerator before using.

Simple refraction of the syrup extends the shelf life by about a month. But for the best flavor, use simple syrup within two weeks of making. Jalapenos can change flavor when stored for a long time.
