Perhaps it’s the simplicity of pickled jalapenos that make them a favorite among spicy food aficionados of all levels. Just pickle juice with pepper. As simple as that. Taste and heat. It’s pure fun in our book.

Of course, pickled jalapeno peppers are easy to find in stores. (in the pickles section), so if you don’t have any jalapenos left, the Juice may not be worth considering in terms of value for money. But if you are at the end of the growing season and have jalapenos around. (Or if you like to eat everything homemade.) Pickles are a great way to prolong your spiciness for a few weeks. Long of course.

They go great with sandwiches and salads, and we (like many others) are known to enjoy snacking in the open fridge. They are too good to be ignored immediately.

  • 20 jalapeno peppers, sliced
  • 2 garlic cloves, peeled and smashed
  • 1 1/4 cups distilled white vinegar
  • 1 1/4 cups water
  • 1/4 cup sugar
  • 2 tablespoons kosher salt
  • In a saucepan over high heat Mix white vinegar, water, sugar, salt and garlic together. Stir occasionally until the sugar is completely dissolved. and boil the mixture.

  • Add the jalapeno pepper rings, making sure to coat the rings with the marinade. Then remove the sauce pan from the heat source and let the jalapenos soak in the liquid for 15 minutes.

  • Transfer the jalapeño marinade to the jar, then slowly pour the marinade over the jalapeño until the marinade fills the jar.

  • Let the chilled jalapenos cool to room temperature. Enjoy now or for best taste. Cover bottle and refrigerate for 2 to 3 hours before using.
