  • 1 tablespoon olive oil
  • 1 teaspoon crushed garlic
  • 1 yellow onion
  • 1 Serrano pepper or other pepper of your choice Remove seeds and finely chop.
  • 1 can of cooked black beans
  • 6 bread dough
  • Choose chopped lettuce (tomatoes and peppers work well)
  • 1 cup shredded Jack cheese (strong cheddar also works well)

  • Preheat oven to 300 degrees F.

  • Place the pan over medium heat.

  • Add the oil, garlic, and diced onion to the pan and cook, stirring occasionally, for 5 minutes.

  • Add the chili and black beans to the pan and stir well.

  • Reduce heat on pan to medium. Then cook the black bean mixture for 10 minutes, stirring frequently.

Prepare and Cook Burrito

  • Pour the black bean and chopped lettuce mixture into the tortillas. Then fold it into a burrito shape. Place each burrito in the baking pan. Sprinkle jack cheese on top of each burrito.

  • Place the burrito baking tray in the preheated oven. Cook for 2 minutes (or until cheese is melted).

  • Serve alone or with Mexican rice, other salads, or pickled jalapenos.
