If you want a little extra heat, try sprinkling some sliced red pepper. It adds a warm red plus matching butter blue and egg whites and yellows.

Preheat oven to 450 degrees F.
Scrape off the center of each avocado to cover the eggs. Then place half on a baking tray.
Drizzle lemon juice over half an avocado. Add a pinch of salt to each avocado.
Divide the egg – yolk – into each avocado halves. Then place the baking tray in the oven.
Bake the butter for 10 to 12 minutes or until the eggs are as firm as you’d like.
Remove from oven Sprinkle butter with black pepper and cayenne pepper and serve.
for extra heat Serve with sliced fresh red peppers (red serrano, fresno or jalapeno).
