Spicy Grilled Mac and Cheese Sandwich

- 3/4 cup macaroni and cheese
- 2 slices of thick sourdough bread worked well.
- Cheddar cheese, 3 slices
- 1 tablespoon butter
- 1/2 teaspoon crushed red pepper
If the macaroni and cheese is cold (leftover), reheat the macaroni and cheese in a nonstick skillet over medium heat for 2 to 3 minutes.
Butter one side of each slice of bread. then in a separate pan Place the bread butter side down over medium heat. Place the cheddar cheese on top of each slice and let the cheese melt while the bread is toasted until golden brown.
Shape the mac and cheese into squares to fit the bread of your choice. Then place the remaining pieces of cheddar cheese on top of the mac and cheese. and let the cheddar melt. Sprinkle melted cheese with crushed red pepper.
Move the mac and cheese squares on a piece of bread. then place the other side. If needed, continue toast until the bread is golden brown on both sides.
Remove from oven, cut in half and serve.
