You can’t go wrong with these rich smoky chocolate chip cookies. That’s the premise behind these Mexican-style spicy hot chocolate cookies. Cocoa and chocolate chip powder sweetened with smoked chipotle powder and spicy cayenne. It was an oral explosion of earthy candy, smoke, and heat.

If you are concerned about the heat, return the used cayenne pepper. A quarter teaspoon will give you a much smoother experience. You can also choose to omit the chili powder entirely and use chipotle powder.

If you want to increase the heat, try this: Sprinkle some chipotle powder over the cookies before serving. Just a light layer of dust provides an immediate stuffy experience.

  • 2 1/4 cups all-purpose flour
  • 1 1/2 cups white sugar
  • 1 cup semi-sweet chocolate chips
  • 1 cup room temperature butter (2 sticks of butter)
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 2 teaspoons cream of tartar
  • 1 teaspoon cinnamon powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon chipotle powder
  • 1/2 teaspoon kosher salt
  • Preheat oven to 375 degrees F and line 2 baking sheets with parchment paper.

  • In a large mixing bowl Include white sugar, butter, vanilla extract. and kosher salt Use a mixer to beat ingredients until smooth.

  • To mix, add eggs, cream of tartar. and baking soda beat together

  • Place flour, cocoa powder, cinnamon, chili powder and chipotle powder in a bowl. fight together

  • Add the chocolate chips to the dough and stir to combine.

  • Using a spoon, scoop dough into standard sized cookies on a parchment lined baking sheet.

  • Place the baking tray in the oven and bake for about 10 minutes or until the edges begin to crack slightly.

  • Remove the baking tray from the oven and transfer the cookies to a cooling rack. Let cool for about 5 minutes before serving.

  • Optional: Lightly sprinkle biscuits with chipotle flour. Add sugar (or chipotle sugar) to add instant heat and smoke to the cookies.
