Serves 6 meals

  • 4 ounces shiitake mushrooms, sliced
  • 6 cups chicken broth
  • 2 shallots, diced
  • 5 cloves of garlic, minced
  • 1 cup heavy cream
  • 6 tablespoons butter
  • 4 tablespoons white flour
  • 1 tablespoon black pepper
  • 1 tablespoon rosemary
  • 1 tablespoon basil
  • 1 tablespoon garlic
  • 1 teaspoon cayenne pepper
  • Paprika for topping
  • Pour broth into a large soup pot and bring to a boil.

  • Add shiitake mushrooms, black pepper, chili powder, rosemary, and basil. Continue to simmer, stirring occasionally for 10 minutes, then reduce heat to simmer.

  • In a sauté pan, melt the butter, then add the shallots, garlic and chives and saute for 2 minutes, then add the flour, stir and cook for another 2 minutes.

  • Add 2 to 3 cups of broth to the saute pan and stir well. Remove the meatballs from the mixture.

  • Pour the sauté pan mixture back into the soup pot. Then increase the heat to medium heat and cook for another 2 to 3 minutes.

  • Remove the soup pot from the stove. Then use a food processor. Blend the soup until you get the desired smooth texture.

  • Add heavy cream and stir to combine. Reheat the soup pot over medium heat for 4 to 5 minutes so the soup is hot and ready to serve.

  • Ladle the soup and sprinkle paprika all over the soup. Service.

For a spicier soup, choose hot paprika or cayenne pepper for seasoning instead of regular paprika or mild paprika.
