  • 1/2 cup chopped red onion
  • 1/2 cup diced bell peppers Yellow bell peppers look good in this recipe.

  • juice of 1 lemon
  • 1 tablespoon fresh mint, finely chopped
  • 1 tablespoon sugar
  • 1 tablespoon white vinegar
  • 1 teaspoon salt
  • Place all ingredients in a large bowl and mix well.
