Planning a special dinner and want something different? The Jalapeño stuffing turns the traditional side into something a little more edgy. You still have the comfort of home. “Warm and fuzzy” but with an extra kick.

This recipe calls for jalapeno peppers (of course), which gives them the medium-low heat that’s so edible here. Want something hotter? Choose Serrano peppers over jalapenos. Serranos can be twice as hot as jalapenos. So it’s a significant thermal upgrade. About taste They have a fresh grassy flavor similar to jalapeños. So Serrano works well with this flavorful recipe.

Stuffed Jalapeno

Classic stuffed spicy jalapeños.

  • 1 loaf of Italian bread, about 1 pound, cubed
  • 2 jalapeno peppers, seeded and finely chopped*
  • 2 yellow onions, chopped
  • 4 stalks of celery, thinly sliced
  • 6 green onions, diced
  • beat 2 eggs
  • 2 cups grated cheddar cheese
  • 1 1/2 cups low-sodium chicken broth
  • 3/4 stick of unsalted butter, save the other 1/4 for buttering the baking dish
  • 1/2 cup light beer
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Preheat oven to 375 degrees F. then spread butter on a baking tray

  • Place the bread balls on a baking tray and bake until lightly browned/crunchy (about 8 to 10 minutes).

  • Melt butter in a saucepan over medium heat. Then add the jalapeno peppers. Yellow onion, celery, salt and pepper; saute vegetables until onions are translucent (about 10 minutes).

  • Add beer to vegetables and stir frequently. until beer evaporates, about 5 minutes.

  • In a large mixing bowl, combine vegetables, breadcrumbs, chicken broth, cheddar cheese, eggs, and green onions.

  • Cover baking pan with aluminum foil. Then bake the filling for 20 minutes, remove the lid and bake for another 20 minutes or until the filling is lightly golden on top.

  • Remove from oven and let cool for about 5 minutes. Service.

Want a spice? Serrano peppers also work here. They can be twice as hot as jalapenos and produce the same flavor.
